Everyone loves to come home after a long day of work or play to the delicious aroma of dinner waiting for them. On a cold night, there is nothing better than a homemade chowder accompanied by freshly baked bread. Using a slow cooker and a bread machine with a timer option, a hearty, healthy meal becomes a pleasure rather than a task.
Chicken corn chowder is a thick soup or stew with delectable chunks of chicken, potatoes and other vegetables. While a chowder traditionally contains seafood, such as a New England clam chowder, it is not a mandatory ingredient. This recipe calls for both potatoes and sweet potatoes in addition to the feature ingredients.
Crock Pot Chicken Corn Chowder
Serves 6-8
Ingredients
- 2 tablespoons butter
- 1 1/2 pounds chicken, in 1/2" cubes
- 1/2 cup onion, chopped
- 2 ribs celery
- 2 small carrots, sliced
- 2 cups frozen corn kernels
- 1 1/2 cups chicken broth
- 1 teaspoon dried dillweed
- 1 1/4 cup red bell pepper, diced
- 1 1/2 cup potato, diced
- 1 1/2 cup peeled sweet potato, diced
- 1 can creamed corn
- 1 can evaporated milk (or partly-skimmed evaporated milk)
Directions
- Brown chicken in butter and brown in a 5-6 quart Crock Pot.
- Saute onions and celery until tender and transfer to Crock Pot.
- Add all other ingredients EXCEPT evaporated milk to Crock Pot.
- Cook on low for 5-6 hours, until chicken is cooked and potatoes are tender.
- During the last 20-30 minutes add the evaporated milk and allow to warm through.
Bread Machine Multi-Grain Bread
Makes 1 2-pound loaf
Ingredients
- 1 1/4 cup water
- 1 1/2 tablespoons butter
- 3 tablespoons liquid honey
- 1 1/2 teaspoon salt
- 1 1/2 cups all purpose flour
- 1 3/4 cups whole wheat flour
- 3/4 cup Red River Cereal
- 1 1/2 teaspoons bread machine yeast
Directions
- Add water, butter and honey to the bread pan.
- Add salt, flours and cereal to the bread pan.
- Use your finger to form a well in the flour. Carefully add yeast to the well, making sure it does not come into contact with any liquid ingredients.
- Snap the bread pan into the bread machine and close the lid.
- Select the whole wheat setting, and choose desired crust colour.
- Following bread machine directions, set the delay timer appropriately so bread is ready when you are planning to serve dinner.
Serve the chowder and warm bread on their own, or add a simple salad of greens and a light dressing for a truly balanced and delicious meal.
